Summer Loving

Unfortunately, I don’t have a new recipe to share today. I have been super busy at work this week, and consequently unable to spend much time in the kitchen. However, I do have a recipe for delicious, healthy veggie burgers that should be up within the next few days.

Today’s post is a celebration of summer. Aside from the warm weather, summer is a great time for fresh fruits and vegetables and cold, refreshing beverages. Here are some of my favorite recent food and drink recipes/products that I am loving this summer.

1. Peachy Palate’s Apricot and Almond Baked Oatmeal for Breakfast: If you like apricots, then you will love this breakfast. It is filing, flavorful, fruity, and delicious. I like to bake this the night before and then simply reheat for breakfast, but if you have the time in the morning to make this fresh, it tastes even more heavenly fresh out of the oven.

2. Blended Bananas: In the summer, I love to simply blend together over-ripe bananas and a cup of ice until they reach a frosty-like consistency. The blended bananas are perfect for an afternoon snack or an after-dinner treat.

3. Nordstrom Ebar’s Unsweetened Pomegranate Iced Tea: Although, I am a self-professed Starbucks addict, I actually prefer Nordstrom Ebar’s Pomegranate Iced Tea to Starbuck’s Passion Fruit Iced Tea. Nordstrom Ebar’s iced tea is naturally sweeter and more flavorful than Starbuck’s, making it the perfect treat and refresher for a hot, summer day.

4. Chocolate Covered Katie’s Voluminous Vanilla Ice Cream: If you haven’t checked out Katie’s healthy dessert blog, I urge you to do so. She shares some of the most inventive dessert recipes with a healthy twist. All of her recipes are vegan and many are also gluten free, or gluten free adaptable. During the hot summer months, I love to make her Voluminous Vanilla Ice Cream, with three simple ingredients: almond milk, natural sugar, and vanilla extract. I use her freezer/blender method, since I do not own an ice cream maker, but she also provides a vanilla ice cream recipe for those who do own an ice cream maker. I like to freeze the mixture in the early afternoon, and then blend into ice cream to enjoy for dessert at night.
